The brewing process - a working brewery in South Tyrol

The Martinerhof experience-brewery in the Val Passiria

It’s well worth seeing the brewing process in the Hotel Martinerhof.  What’s really impressive is that you can see the work that the brewer, Martin, does on a brewery tour with beer tasting.  To get an idea of how Martinsbräu is made, the most important steps are described here.

  • Malt mill: the grain is coarsely ground in the mill.
  • Mashing tub: the crushed malt is mixed with water in the mashing tub and boiled up at different temperatures.  In doing so, the starch of the grain converts into sugar.
  • Straining vat: the liquid wort is separated from the solid ingredients (=brewers grain) in the straining vat.  These brewers grains are used as a nutrient-rich animal feed by the local farms.
  • Copper vat: now the wort is boiled in copper vats and the hops are added.  The amount added dictates how bitter the beer will taste.
  • Fermentation process: afterwards, the wort is cooled and mixed with yeast at which time the fermentation process begins.  In this process, the sugar is transformed into alcohol and carbonic acid.
  • Storage cellar: without adding any artificial accelerators, the beer can now be left in tanks in the storage cellar to brew and mature.  The wort will become an alcoholic beer in three to five weeks.
  • Enjoy the beer: after the brewing and maturing time, Martinsbräu is decanted into oaken barrels - naturally unfiltered, so that all of the healthy nutrients and the wonderful naturally cloudy colour remains.  No additives are added to increase the life of the beers in the Brauhotel Martinerhof.  You are drinking a pure, healthy natural product, which flows from the kegs into the glass without the addition of carbonated gas. 

Delicious creations emerge from the brewing process in the Martinerhof.  The beers contain carbohydrates, mineral nutrients and micro nutrients.  In addition, Martinsbräu is rich in vitamin B, dietary fibres and hop bitterns which have a calming effect.
