Nettle pasta with chanterelle, parsley and cherry tomatoes
For 4 persons
Vegetables:
- 100 g chanterelles
- 20 g chopped onion
- ½ chopped garlic clove
- 4 cherry tomatoes
Other ingredients:
- 320 g nettle noodles
- 30ml Olive oil
- shaved parmesan
Spices:
- 1 tbsp of chopped parsley
- cut rosemary tips
Preparation:
- Boil the nettle pasta in salted water.
- Clean the mushrooms, wash and cut into pieces.
- Sauté the chopped onion and garlic in olive oil.
- Add the mushrooms, parsley and cherry tomatoes and sauté briefly.
- Arrange the food on the plate and garnish with rosemary tips and grated parmesan.
Tips and recommendation:
- The chanterelles can also be replaced with boletus or champignons, etc.
- Instead of parsley, you can also use rocket, dandelion leaves, etc.
