Nettle pasta with chanterelle, parsley and cherry tomatoes

For 4 persons

Vegetables:

  • 100 g chanterelles
  • 20 g chopped onion
  • ½ chopped garlic clove
  • 4 cherry tomatoes

Other ingredients:

  • 320 g nettle noodles
  • 30ml Olive oil
  • shaved parmesan

Spices:

  • 1 tbsp of chopped parsley
  • cut rosemary tips

Preparation:

  • Boil the nettle pasta in salted water.
  • Clean the mushrooms, wash and cut into pieces.
  • Sauté the chopped onion and garlic in olive oil.
  • Add the mushrooms, parsley and cherry tomatoes and sauté briefly.
  • Arrange the food on the plate and garnish with rosemary tips and grated parmesan.

Tips and recommendation:

  • The chanterelles can also be replaced with boletus or champignons, etc.
  • Instead of parsley, you can also use rocket, dandelion leaves, etc.
